The Priorat Terroir Historic Rouge 2023 from Terroir al Límit is a bottle that begins with nostalgia and ends in revelation. The wines of Terroir Historic are made to be enjoyed, not contemplated. Nostalgic and honest in spirit, they evoke the rhythm of life in 1970s Priorat and the winemaking style popular in that era. Born from nine different villages across Priorat — a puzzle of slate and old vines gathered into a single bottle — this red demonstrates that Dominik Huber, one of Catalonia's most visionary vintners, vinifies regional poetry as skillfully as grand cru parcels.

The Terroir Historic project and its terroir

Terroir Historic arose from Dominik Huber's fascination with Priorat's history, its rhythm of life, simple cuisine and honest wines that honoured their origin. Passing the ruins of the Sindicat Agrícola in Torroja, he recalled those rare 1970s Priorat bottles he had tasted, and imagined a future where such wines might be made again. Terroir Historic distinguishes itself from Terroir al Límit, founded on the Burgundian principle of single-vineyard wines, by seeking to express Priorat's complexity as a whole. One red, one white, mosaics of aromas and flavours that authentically translate the landscape's diversity. For this wine, Dominik brings together Garnacha and Cariñena grapes from several organically-farmed vineyards across Priorat's nine villages, Bellmunt, Gratallops, El Lloar, Escaladei, Porrera, Poboleda, Torroja, Vilella Alta and Vilella Baixa. The vines, 35 to 50 years old, are planted on the famous llicorella soils — those fractured black schists that are Priorat's absolute mineral identity — between 350 and 800 metres altitude, an amplitude generating complementary ripeness profiles of great complexity. Winemaking is spartan in its purity: whole-bunch fermentation with indigenous yeasts, followed by six months ageing in concrete tank, with no wood whatsoever, allowing terroir and fruit to express themselves without intermediary.

Tasting profile

The colour is a bright purple-red, well-balanced, neither watery nor syrupy. The nose reveals beautiful red fruit aromas, perfumed floral notes, dried Mediterranean herbs and sharp minerality imposed with the frankness of old schist. Aromas of raspberries and wild cherries mingle with notes of cedar, minerals and bilberry. On the palate, whole-bunch fermentation brings remarkable tension and natural freshness for a red from Priorat: the tannins are fine and chalky, lively acidity well integrated structures a light and precise texture, and the mineral, peppery finish extends with persistance and purity evoking the finest Garnacha expressions on schist. A red striking in its naturalism, drinkability and Catalan sincerity.

The domaine

Dominik Huber founded Terroir al Límit in 2001 at Torroja del Priorat, with the ambition of creating, in the spirit of great Burgundies, single-vineyard wines expressing each llicorella terroir with absolute precision and purity. Swiss by origin, trained in Burgundy and deeply rooted in Priorat, he is today regarded as one of Catalonia's most influential and respected vintners. The entire vineyard is farmed in organic and biodynamic viticulture, with hand harvests, indigenous yeast fermentations and minimal wood use for Terroir Historic cuvées, a non-interventionist philosophy placing terroir and fruit at the forefront of every glass.

Food pairings

This Priorat Terroir Historic Rouge will pair beautifully with homemade croquetas of Iberian ham, country terrine with walnuts, garlic and herb-roasted chicken, veal gratin with caramelised onions, grilled vegetable pasta, or Catalan aged cheeses such as Garrotxa or Serrat Negre. Its natural freshness and lightness also permit serving it slightly cool, around 14–15 °C, in the congenial and direct spirit that is the soul of the Terroir Historic cuvée.
