Terrasses du Larzac Les Ouvrées 2023 from Clos de la Barthassade is a distinctive cuvée from a benchmark domaine in Languedoc, run by Hélène and Guillaume Baron with remarkable rigour. Situated on the heights of Terrasses du Larzac, the vineyard benefits from a contrasting climate marked by significant temperature swings between day and night, favouring finesse, freshness and aromatic complexity.
The vines, planted on clay-limestone and stony soils, are cultivated in organic agriculture with deep respect for living systems. Yields are controlled, harvesting takes place at perfect ripeness, and winemaking is precise, limiting extraction to preserve the fruit's elegance and the terroir's identity. Ageing, measured in its approach, accompanies the wine without ever dominating it.
The blend, dominated by Grenache and completed by Syrah and Mourvèdre, offers a deep nose of ripe dark fruit, garrigue, spice and lightly floral notes. On the palate, the texture is ample and silky, supported by fine tannins and remarkable freshness that structures the whole. The finish is long, well-balanced and delicately spicy, revealing all the nobility of the Terrasses du Larzac terroir.
A racey and elegant cuvée, which can be enjoyed today after aeration, but will gain in complexity with a few years of cellaring. Ideal with roasted or grilled meats, braised dishes, herb-crusted lamb or refined Mediterranean cuisine.
