La Griotte du Roulot is undoubtedly the rarest and most precious liqueur ever made by Domaine Jean-Marc Roulot, a confidential production of only around one hundred bottles, crafted in Meursault in the tradition of a family of distillers reaching back to 1866. It carries the same rigorous vision that makes the domaine's wines universal reference points in Burgundy. A liqueur found nowhere else, and one you will not forget.

The fruit and its craft

The griotte, a small wild cherry with dark skin and tart, intense flesh with a subtle bitter edge, is one of the noblest and most demanding fruits in the Burgundian liqueur tradition. More complex and profound than the sweet cherry, it combines bright natural acidity with an aromatic palette of singular richness: preserved red fruits, a sweet almond note from the stone, a delicate vegetal and floral touch that echoes cherries picked straight from the tree. This complexity is precisely what draws the most demanding artisan distillers. Made in Meursault using the house's traditional methods, this Griotte du Roulot comes from fruit selected at perfect ripeness, macerated in alcohol with the precision that marks every gesture of the domaine. The fruit speaks without excess, with genuine flavour integrity. The palate offers a subtle balance between sweetness, freshness and intensity, avoiding any heaviness and allowing an elegant, digestible experience.

Tasting profile

The colour is a deep red with garnet and violet reflections, showing beautiful depth. The nose is immediate and precise: the griotte announces itself with full identity, intense red fruits, black cherry, a subtle stone fruit and almond note, a delicate floral touch. With aeration, faintly spiced nuances and discreet mineral undertones enrich this bouquet with remarkable complexity and honesty. On the palate, the attack is fresh and clean, immediately fruity. The griotte's natural acidity expresses itself with vivacity and elegance, balanced by measured sweetness that brings roundness without ever weighing the whole down. The texture is silky, the fruit precise and persistent, and the finish lingers with a slight bitterness, leaving that impression of naturalness and absolute sincerity that marks the Roulot signature. Like the domaine's wines, restraint and depth take precedence over immediate display.

The domaine

Jean-Marc Roulot is among the most admired and respected figures in Burgundy, leading a domaine founded in 1830 in Meursault and recognised universally as one of the absolute references for Chardonnay worldwide, alongside Coche-Dury, Leflaive, Comtes Lafon and Raveneau. Since 1989, he has managed his 16 hectares in biodynamics with constant rigour. Yet Jean-Marc Roulot is also, by family inheritance, a distiller and liqueur maker. The tradition reaches back to his great-grandfather in 1866, and the domaine's still continues to produce, in minimal quantities, spirits and liqueurs of such precision and honesty that they naturally extend the domaine's identity. La Griotte, produced in only one hundred bottles, is the most confidential and moving of these cuvées.

Tasting and serving

La Griotte du Roulot is best enjoyed neat, slightly chilled between 10 and 12 °C, in a liqueur glass or tulip-shaped glass. It pairs beautifully with Black Forest cake reimagined, an intense dark chocolate fondant, red fruit panna cotta or aged cheeses such as Époisses or aged Comté, whose power will resonate harmoniously with the griotte's acidity and depth. It can also be savoured as a prestige digestif after a fine meal, alone and in silence, as one does with rare things.
