Gin Orion Distillerie Pegasus

The Orion Gin from Distillerie Pegasus is the first spirit born in the cellars of Meursault, the founding creation and signature cuvée of a distillery whose ambition is to reveal the singular character of Burgundian terroir through exceptional organic spirits. A tribute to botanical finesse: five carefully selected botanicals, distilled separately in small batch and assembled with precision for a gin with a very clean profile, fresh, lively, with floral and herbal accents of great coherence. A contemporary gin of remarkable purity and elegance, certified organic FR-BIO-01, whose aromatic journey begins in the Swiss Alps and ends on the terraces of Menton overlooking the Mediterranean.

The five botanicals and production

Maxime Girardin deliberately chose simplicity and precision: only five botanicals in addition to juniper, each selected for the singular character of its origin and purity of its aromatic expression. Juniper berry is the absolute foundation, well present and well defined, anchoring this gin in tradition while leaving all necessary space for the other botanicals to express themselves. The bitter orange from Menton, cultivated on the sunny terraces of the Riviera under the influence of sea spray, brings intense citrus freshness and delicate bitterness. The lemongrass verbena and thyme, cultivated in the Swiss Alps at high altitude where the stress of cold pushes plants to produce their most concentrated aromatic molecules, bring fresh and precise herbal notes. The orange mint and bergamot bee balm from the Swiss Alps complete this bouquet with remarkable natural freshness and complexity. Each botanical is distilled separately in the distillery's iStill stills before final blending, a fundamental decision that preserves the singular character and purity of each aroma. The blending water comes from a borehole 152 metres deep in the limestone rock of Meursault. Neutral spirit from organic French cereals. Alcohol content: 43% vol. Volume: 50 cl.

Tasting profile

The colour is crystalline, clear and brilliant, in a midnight blue bottle evoking starlit skies. The nose is fresh, herbal and immediately precise: the bitter orange asserts itself first with its citrus freshness and characteristic aromatic intensity of Menton citrus fruits, before orange mint takes over with a subtle and elegant transition to the fresh notes of thyme and verbena. The flower of the Alpine mountains carries the whole thing through to length, allowing a natural freshness and light sweetness to show through. On the palate, juniper berry dominates with fine presence, supported by a freshness both citrus and herbal of great coherence. The alcohol is very discrete and the texture silky, with remarkable natural drinkability. The finish is fresh, herbal and persistent, with this return of citrus and Alpine plants that immediately distinguishes this gin from more classical expressions.

The distillery

Founded in 2021 in Meursault by Maxime Girardin, son of Burgundian wine growers, Distillerie Pegasus produces exceptional organic spirits from carefully selected ingredients, water drawn from 152 metres deep in the limestone rock of Meursault and organic Burgundian cereals. Each botanical is distilled separately in small batch in state-of-the-art iStill stills before blending. In June 2024, actress Emilia Clarke became the global ambassador for the house.

Tasting and serving

Delicately herbal, this gin will enhance acidulous cocktails such as the Gin Fizz, or bitter cocktails like the Negroni. In a Gin Tonic, it will flourish with a premium dry tonic, a few large ice cubes, an orange twist and a sprig of fresh thyme. In a signature cocktail, Orion's Oasis combines raspberry, lime and pansy flower for a festive and colourful result. Neat on ice, it will reveal the full coherence and purity of its five botanicals in absolute freshness and delicacy.
