Gin Esprit d'Automne from Distillerie Le Secret de l'Herbier captures autumn botanicals, wild mushrooms and warm spices in a limited-edition, artisanal gin made in the heart of Burgundy. Original and layered, it reflects the terroir of Vaux Saules through locally foraged ingredients.
Gin Esprit d'Automne from Distillerie Le Secret de l'Herbier is a premium, confidential creation and a true ode to Indian summer, crafted in limited edition at Vaux Saules in the heart of Burgundy, where each botanical is foraged locally before maceration and distillation.
A bottle presented by Distillerie Le Secret de l'Herbier, founded by Cyril Guyon, made from a careful selection of locally foraged botanicals including Williams pear, calendula, crapaudine and Burgundy saffron, distilled in the Holstein alembic installed in 2022 at the heart of the distillery. This gin is bottled at 43 degrees. Esprit d'Automne remains one of the most distinctive expressions in the Esprit de Saison range from Le Secret de l'Herbier, gold medallist at the International Wine & Spirits Awards, and continues a craft heritage rewarded with thirteen gold medals at international competitions.
Ageing and provenance
Made from a rigorous selection of botanicals foraged locally around the distillery, this gin marries the fruity freshness of Williams pear with the spiced warmth and colour of Burgundy saffron, the singular aromatic signature of this autumn cuvée. A short maceration of botanicals after distillation, characteristic of the Esprit de Saison range, enriches the distillate with warm and fruity nuances evoking Indian summer. Based at Vaux Saules in Burgundy, Distillerie Le Secret de l'Herbier favours wild foraging and local partners, distilling each cuvée in small quantities in its custom-made Holstein alembic designed to reveal the full purity of selected ingredients.
Tasting profile
On the nose, beautiful floral and fruity fragrances emerge, carried by Williams pear and calendula, supported by the spiced warmth of Burgundy saffron. Beneath these aromatic layers, crapaudine brings a singular vegetal note that anchors the whole. On the palate, the gin is generous, revealing orange and mandarin zest joined by honeyed notes of linden and vervain that offer subtle, comforting sweetness. The finish is intense and balanced, marked by a light spiced warmth from the saffron, punctuated by hawthorn and flax seed notes, for an aromatic journey of fine persistence.
The house
Distillerie Le Secret de l'Herbier is led by Cyril Guyon, trained restaurateur who became a distiller through passion after more than thirty years in Dijon hospitality. Based at Vaux Saules in Burgundy, the house crafts its spirits in small cuvées with consistent rigour, rewarded by many international distinctions, and embodies genuine eco-responsibility, taking only what is necessary during local foraging and respecting the seasonality of ingredients.
Tasting and pairing
This Gin Esprit d'Automne is best enjoyed neat, in a tulip glass, to fully appreciate the saffron richness and fruity roundness of this seasonal creation. It also lends itself well to creative cocktails that highlight its warm, spiced notes. It will pair beautifully with saffron-roasted poultry, a pear dessert, aged cheese or honey-based pastry, whose sweetness will resonate wonderfully with the spiced warmth and fruity richness characteristic of this Burgundy gin.
