Château-Chalon 2017 Domaine Damien Courbet
At the heart of the Jura's most emblematic appellation, Damien Courbet crafts wines of great precision, faithful to the spirit of Savagnin aged under voile. On the blue marls of Château-Chalon, he tends his vines with rigour and respect for terroir, favouring controlled yields and traditional winemaking.
Made exclusively from Savagnin, this 2017 vintage was aged for more than six years in barrel without topping up, under a veil of yeast, according to Jura tradition. This slow oxidative ageing forges the wine's unique personality and develops its full aromatic complexity.
The colour is a deep gold with amber reflections. The nose is powerful and noble, revealing characteristic notes of fresh walnut, toasted hazelnut, spices, mild curry and dried apple, lifted by a saline and finely oxidative touch. On the palate, the structure is ample, upright and intensely persistent, driven by remarkable freshness and tension. The finish is long and vibrant, leaving a saline and spiced signature characteristic of the appellation.
A wine of impressive ageing potential, it can evolve for several decades. Serve around 14–15°C, ideally with creamed poultry and morels, aged Comté, mushroom risotto or the traditional poularde au vin jaune.
