A masterful cuvée and the culmination of Michel Couvreur's style, Very Sherried 25 years embodies the excellence of long ageing in Sherry casks, where time refines the spirit and reveals the full depth of the malt. Distilled in Scotland then aged for a quarter century in Burgundy cellars, this whisky reaches a rare level of complexity, marked by an intense and perfectly integrated influence of sherry.
The nose is of exceptional richness, opening onto deep aromas of dried fruits, fig, date and prune, mingled with notes of walnut, noble leather and light tobacco. On aeration, nuances of intense cocoa, roasted coffee and candied orange enrich this bouquet with great elegance.
The palate is ample, powerful and of incredible concentration, whilst retaining a silky texture. The flavours of preserved dark fruits, dark chocolate, liquorice and soft spices intertwine with notes of noble oak, perfectly integrated by time. The balance between richness, freshness and complexity is remarkable.
The finish is endless, deep and entrancing, marked by spiced notes, lightly balsamic and an elegant bitterness that prolongs the tasting with nobility.
