Based in Bouze-lès-Beaune, the Michel Couvreur house perpetuates a singular approach to whisky, founded on rigorous selection of Scottish distillates and lengthy ageing in sherry casks in its Burgundy cellars. Emphasis falls on maturation, aromatic complexity and the expression of noble wood rather than the pursuit of power.
Blossoming Auld Sherried fully embodies this philosophy. Aged in casks that previously held sherry, this whisky develops a rich, profound and delicately oxidative profile, marked by great elegance.
On the nose, intense aromas of dried fruit, prune, fig and candied grape emerge, accompanied by notes of cocoa, walnut and soft spices. The palate is ample and silky, marked by flavours of caramel, ripe fruit and dark chocolate, supported by a fine wooden framework perfectly integrated. The finish, long and warming, extends the spiced and gently vinous nuances typical of great sherry cask ageing.
