Producer
Originally a producer and négociant of Burgundy wines, Michel Couvreur discovered the craft of whisky distillation during a journey to Scotland. This sparked a conviction that would define his reputation: 90 percent of a whisky's quality comes from cask maturation and the choice of wood, while only 10 percent stems from distillation. As an independent bottler, he chose to focus on whisky ageing rather than distillation itself. He specialised in the meticulous selection of casks, particularly those of Sherry and Port, which impart aromas of preserved fruits and spices to the spirit. Back in France, he established a cellar in Bouze-lès-Beaune, strategically positioned halfway between Spain, source of his casks, and Scotland, source of his distillates. He built over 150 metres of galleries carved into the Beaune limestone, creating two distinct microclimates: one humid for slow, refined maturation, and one drier for greater intensity and concentration. Through this dance of casks and years of patience, he achieved spirits of unparalleled quality.
Always seeking discovery, he works with casks of wines from various regions, vin jaune, Burgundy wine, Sherry and others, creating a broad range with distinct expressions, yet always marked by a singular, recognisable style. With meticulous cask tracking, methodical blending, and considerable expertise, Michel Couvreur became THE reference for French whisky. After his death in 2013, his son-in-law Cyril Deschamps and cellar master Jean-Arnaud Frantzen, supported by their wives, Marthe Couvreur and Alexandra, have carried on his legacy with the same devotion.
Today, success continues. With the construction of their own distillery, they now use their own distillates. In the same spirit of rigorous grain selection, careful malting, and slow, controlled distillation, their new make spirit possesses genuine aromatic complexity even before entering the cask. We look forward to tasting these nectars in ten or twenty years.
The Cuvée
Distilled in Scotland, this Grain Whisky has been matured for four years in cask and bottled in Burgundy. Notably fine and fresh, with floral aromas complemented by notes of honey and subtle roasted grain. A perfect introduction to the Couvreur style, defined by balance and remarkable palate texture.
