Fleeting 12 ans 2024 brings to light a finer, more nuanced reading of maturation: a finish in ex-casks of fortified Pinot Noir lends all its richness and originality, while preserving the house signature carried by great ageing in Sherry casks. Drawn from selected Scottish distillates then aged twelve years in the cellars of Bouze-lès-Beaune, this whisky plays on the balance between maturity and freshness.
The nose is elegant and subtle, marked by notes of dried fruit, fresh almond, honey, and cereal, accompanied by delicate touches of yellow fruit and gentle spices. The influence of sherry presents itself with finesse, bringing a light oxidative patina without dominating the expression of the malt.
The palate is precise, fluid, and harmonious, with fine tension. It develops flavours of ripe pear, hazelnut, dried fruits, and light notes of caramel and cocoa, in a more delicate register than the house's more powerful cuvées. The whole remains digestible, carried by constant freshness.
