The Chablis 1er Cru Vaillons 2023 from Domaine Garnier & Fils is one of the most classical and expressive first growths of the left bank of the Serein, a Chardonnay of remarkable clarity and mineral tension, born from a broad ensemble of parcels encompassing several complementary sub-climates whose combination confers on the wine an aromatic complexity and depth that place it among the most faithful and engaging expressions of the Chablis appellation.

The Vaillons terroir

The name Vaillons comes from the Latin vallis, simply designating a small valley. This vast first cru of the left bank of the Serein brings together several sub-lieu-dits with complementary personalities: les Épinottes, les Roncières, les Lys, les Séchet, les Chatains and les Beugnons. Their blending generates an aromatic complexity difficult to achieve from a single parcel. The Vaillons hillside is among the richest in oyster fossils across the appellation, with recent plantings having uncovered remarkably preserved Exogyra virgula fossils, reminding us that these lands formed the bed of a warm, shallow sea 150 million years ago. The soils are clay-limestone, composed of Kimmeridgian marls with a sticky texture at the surface, difficult to work after rain but of exceptional mineral richness, resting on a subsoil of compact limestone sometimes bearing thousands of fossils. The exposure is particularly sunny, sheltered from northerly winds by the natural slope configuration, conferring on Vaillons a relatively early maturity and wines that are both floral and mineral, approachable in their youth yet capable of fine evolution in bottle. For Domaine Garnier & Fils, the Vaillons are aged in old oak barrels and stainless steel vats, with fermentation by indigenous yeasts, continuing the domaine's non interventionist philosophy.

Tasting profile

The colour is pale yellow with green glints, bright and perfectly limpid. The nose is expressive and floral from the outset, with aromas of white flowers: hawthorn and honeysuckle, associated with notes of fresh citrus, pear, green apple and the characteristic iodine and shell mineral character of the Kimmeridgian. With aeration, the wine develops more complex notes of fresh hazelnut and warm stone that speak to the depth of the terroir. On the palate, the attack is lively and sharp, carried by a precise, well-integrated acidity that structures an ample, slightly creamy body. Mineral tension moves across the palate with elegance, bringing discreet salinity and remarkable persistence. The finish is long, fresh and floral, with that characteristic return of menthol and candied lemon zest that is the signature of Vaillons at maturity. A first cru both approachable now in its vivacity and promising fine evolution over five to eight years.

The domaine

Domaine Garnier & Fils is a family property based in Ligny-le-Châtel, in the northernmost part of the Chablis appellation, run by brothers Jérôme and Xavier Garnier, the first generation to vinify and bottle their own production since 1996. Jérôme tends the vines, Xavier makes the wine, and together they have established the domaine among the essential references of the appellation. The domaine is converting to certified organic farming under Ecocert, with environmentally respectful practices, late harvests to maximize ripeness, and a non interventionist philosophy in the cellar: indigenous yeasts, long ageing on lees, minimal sulphites, light filtration before bottling without fining.

Food pairing

This Chablis 1er Cru Vaillons will pair beautifully with fine oysters, a shellfish platter, grilled langoustines with tarragon butter, sole meunière, tartare of John Dory with fresh herbs or poached salmon with hollandaise sauce. It will also find fine harmony with snails in puff pastry à la chablisienne, chicken in cream or aged goat cheese. Served between 10 and 12°C, with light decanting recommended for younger vintages, it will reveal all the floral freshness and iodine minerality of a great left bank Chablis terroir.
