Terroir and vineyard
Pernand-Vergelesses is among the most discreet and least known appellations of the Côte de Beaune, nestled in a natural valley north of Beaune, between Aloxe-Corton and Savigny-lès-Beaune. This quiet village, where production is dominated by Pinot Noir and Chardonnay, yields wines of finesse and freshness that represent some of the best value on the Côte d'Or. Domaine Pavelot's village parcels sit on the clay-limestone soils characteristic of the Pernand slope, giving the Pinot Noir natural tension, aromatic precision, and fine, well-defined minerality. The vineyard spans 10 hectares worked under organic and biodynamic practices. Vinification uses indigenous yeasts, and since 2005 whole bunches are incorporated during maceration. This carbonic maceration generates extensive aromatic complexity across the fruit with spice notes. Cold pre-fermentation and use of gently toasted barrels allow maximum fruit expression.

The robe is a bright ruby with violet reflections, lively and luminous. This organic Burgundy is generous and fruity while retaining terroir freshness. The nose is expressive and spontaneous, with aromas of fresh red fruits, raspberry, cherry, redcurrant, accompanied by a light floral touch and soft spice from partial whole-bunch vinification. Discreet chalky minerality marks the terroir signature. On the palate, the wine is supple and fruity with excellent drinkability: tannins are fine and well-melded, fresh acidity well integrated brings verve and definition, and the light, elegant material unfolds with directness and naturalness. The finish is clean, fruity and lightly spiced, with pleasant persistence inviting you back to the glass.
