A wine of great concentration in this vintage, evoking notes of dark fruits and oriental spices.
Domaine Dominique Gruhier is one of the leading figures of the Bourgogne Épineuil appellation in northern Burgundy, not far from Chablis. Established at the heart of a historic vineyard that long remained little known, the domaine has spent several decades revealing the singular character of these Kimmeridgian hillsides, rich in marl and limestone, which impart tension, brightness and depth to the wines. Farmed organically and biodynamically, the vineyard receives meticulous work in soil and vine management to preserve the most sincere expression of terroir.

L'Ame des Dannots 2023 comes from an emblematic parcel of the domaine, planted with Pinot Noir on clay-limestone soils marked by the northern freshness of Épineuil and the concentration of old vines. Vinification is minimalist in approach, with gentle extraction and measured ageing that respects the natural energy of the vintage.

The wine reveals a precise nose of fresh red fruits, griottine cherry and raspberry, lifted by a floral note and a hint of spice. On the palate, the material is supple yet structured, carried by fine tannins and beautiful acidity that brings directness and length. The whole offers an elegant balance between gourmandise and tension, a signature of fine Épineuil Pinots.

Enjoy from today for its brightness of fruit, or lay down for 5 to 8 years to gain complexity. It will accompany roasted poultry, herb-dressed fillet of beef or bistronomic cuisine centred on veal and mushrooms beautifully.
