In the heart of the Jura vineyard, Domaine Courbet tends with rigour and patience the emblematic grape varieties of the appellation, honouring the natural equilibrium and character of the marl-limestone soils. The family practises attentive viticulture and precise winemaking in service of authentic, profound expressions of terroir.

The Vin de Paille 2015 comes from a strict selection of bunches harvested at perfect ripeness, then dried for several months on straw mats to concentrate sugars and aromas. After slow pressing, the must ferments gently before long ageing in barrel, developing complexity and aromatic richness.

The colour is luminous amber with coppery glints. The nose is intense and refined, evoking candied apricot, dates, dried fig, orange peel, honey and soft spices. On the palate, the texture is ample and unctuous, perfectly balanced by fine tension that sustains the sweetness. Aromas of dried fruits, delicate caramel and candied zests unfold at length in a persistent and harmonious finish.

A grand wine for fine dining, it accompanies foie gras, powerful blue cheese, dried fruit desserts or citrus tart with distinction. Serve around 10–12°C. Its ageing potential is remarkable, evolving towards more complex notes of rancio and spice.
