White flowers, citrus, hazelnut and a subtle buttery note. A precise and elegant Meursault from Domaine Fabien Coche, fresh and very approachable.
The Meursault 2024 from Domaine Fabien Coche is the domaine's signature village cuvée and one of its most generous and accessible expressions, a great white wine that showcases Chardonnay at its richest, opulent and full-bodied. A standout from the Côte de Beaune, this Meursault demonstrates the domaine's complete mastery of white winemaking. The wine carries the variety's hallmark characteristics: delicate notes of white fruits and citrus, the minerality of its terroir and the complexity gained through ageing. Hints of vanilla, a rich and silky texture and impressive length make this a true gastronomic wine.
Terroir and parcels
This Meursault blends fruit from four parcels: Malpoiriers, Dressoles, Millerands and Pré de Manche, planted entirely with Chardonnay. Though the soils differ between sites, Fabien assembles them to find balance between richness, tension and minerality. This parcel-by-parcel approach, followed by careful blending, lies at the heart of the domaine's philosophy: each lieu-dit contributes its own character to the final cuvée, some more generous and fleshy, others more tense and mineral, creating a village Meursault of remarkable complexity and harmony. Harvesting is done by hand. Alcoholic fermentation occurs at cool temperatures. Fabien then matures the wine with 11 months ageing on lees in French oak barrels, 20 per cent new, with regular stirring. The four parcels are then blended and aged in neutral barrels for seven months. A cold settling step clarifies the wines. Fabien works with minimal intervention: fermentation uses indigenous yeasts, no enzymes, and sulphur is used sparingly. Wines are bottled unfiltered. The domaine has been farming organically since the 2023 vintage.
Tasting profile
The robe is a pale gold with green glints, bright and clear. This Meursault, quintessential to the appellation, reveals aromas of white fruits, hazelnut and fresh butter, carried by a full and vibrant palate. Touches of vanilla, a rich and silky texture and impressive persistence gradually enrich this bouquet with the complexity and generosity characteristic of the 2024 vintage. On the palate, the wine is luscious and well-nourished, with ample matter supported by fresh acidity that is well-integrated, bringing tension and length. The precise, measured ageing adds a buttery and toasted patina delicately woven into a harmonious whole. The finish is long, fruity and slightly mineral, with a pleasant persistence that draws you back to the glass. A village Meursault of great honesty, approachable now and capable of evolving over five to eight years.
The domaine
The Coche family has been growing vines in Meursault for several generations. The domaine was established in the 1940s by Julien Coche-Debord, then taken over by Alain Coche-Bizouard. It is now managed by Fabien Coche, who works 12 hectares across 40 parcels spread over Meursault, Auxey-Duresses, Monthélie and Pommard. In 2003, a small négociant business began, broadening the range to include Puligny-Montrachet, Saint-Aubin and Saint-Romain. The domaine is committed to preserving this Burgundian cultural heritage. Fermentation and ageing take place in traditional Burgundy barrels. Fermentation is gentle and slow, with minimal inputs. Wines are bottled unfiltered.
Food pairings
This Meursault pairs beautifully with scallops in chive cream, sole meunière, line-caught fish with beurre blanc, light veal blanquette, wild mushroom risotto with Parmesan or farm chicken in cream sauce. It also harmonises well with soft cheeses such as Chaource or aged Brie de Meaux. Served between 12 and 14°C, it will reveal the full fruity generosity and natural minerality of a village Meursault signed by one of the most engaging domaines in the commune.
