Distillerie l'Herbier, nestled in the heart of Burgundy, creates a collection of premium spirits with passion and rigour. Each cuvée is born from a meticulous process designed to reveal the aromatic richness of plants and preserve their authenticity.
It begins with careful harvesting of botanicals — berries, spices, herbs and flowers — selected locally around the distillery or from certified organic producers in the region. This approach favours short supply chains and values Burgundian terroir.
The most aromatic plants then macerate in organic wheat alcohol at over 96% ABV, guaranteeing the purity and refinement of the final product. This maceration precedes distillation in a Holstein copper column still, which allows precise and elegant extraction of aromas. During this stage, alcohol vapours pass through baskets of fresh botanicals, particularly delicate ones, whose perfumes enrich the heart of the distillate.
After distillation, the spirit rests and is progressively reduced with pure, fresh water. Some gins, such as those from the ESPRIT DE SAISON range « Le SECRET de l'Herbier », benefit from a final maceration to intensify their complexity before bottling. Everything is presented in a flask inspired by those once used by apothecaries.
Each bottle is then carefully labelled and hand-bottled at the distillery, before reaching lovers of spirits seeking authenticity and Burgundian character.
