Domaine de Fondrèche, situated in Mazan at the foot of Mont Ventoux, stands as an essential reference point for the appellation. On these high-altitude terroirs with their clay-limestone and stony soils, the domaine's team works in organic farming with particular attention to soil life and precise ripeness. The objective is to produce Ventoux wines that are deep, well-balanced and resolutely contemporary.
The cuvée Il était une Fois 2021 comes from carefully selected old vines. The blend, dominated by Grenache and completed with Syrah and Mourvèdre, expresses the full richness of the domaine's terroirs. Vinification is handled gently, extractions are controlled and ageing, partly in wood, accompanies the wine without masking the fruit's expression.
The nose reveals itself as intense and complex, mingling ripe dark fruits, cherry, garrigue notes, sweet spices and a slightly smoky touch. The palate is ample and structured, with present tannins that are perfectly integrated. The balance between southern power and altitude freshness gives the wine considerable elegance and fine length on the finish.
A Ventoux with character, made for the table, ideal with lamb shoulder, roasted game or savoury Mediterranean cuisine. Enjoy it today after aeration or keep for 8 to 12 years to reveal its full complexity.
