Mineral and iodine-edged, citrus and flint. Pure, direct Chablis from Garnier, the authentic expression of Chablisien terroir.
The Chablis 2024 from Domaine Garnier & Fils is one of the purest and most sincere expressions of the Chablis appellation, a Chardonnay of saline, crystalline minerality that built the reputation of this quiet and demanding family domaine, based in the village of Ligny-le-Châtel at the heart of the appellation's northernmost reaches. Winner of a blind tasting against seventeen other Chablis, this village wine embodies better than most the sharp, fresh and mineral style that made this unique Burgundian appellation famous worldwide.

Terroir and appellation

The vineyards of Domaine Garnier & Fils span nearly 30 hectares planted exclusively in Chardonnay, spread across the communes of Ligny-le-Châtel, Maligny, Villy and Lignorelles in the far north of Chablis. This extreme position, cooler than the rest of the vineyard, requires the Garnier brothers to harvest later than average to achieve optimal ripeness, a constraint that translates in the glass as unusual aromatic precision, freshness and tension. The soils of Chablis are among the most emblematic and singular in the Burgundian vineyard: Kimmeridgian marls, argilo-calcareous, composed of oyster fossils and tiny marine shells deposited some 150 million years ago on the floor of a shallow sea. This substrate of exceptional geological richness is the source of the saline, iodine and chalky minerality that sets Chablis apart from every other Chardonnay in the world. The village cuvée is aged on lees for eleven months in stainless steel, without wood, to preserve intact the purity of the fruit and raw expression of the terroir.

Tasting profile

The robe is pale yellow with green glints, crystalline and luminous. The nose is fine, fresh and immediately recognizable: aromas of Granny Smith apple, green pear, white peach and lemon mingle with floral notes of white peony and acacia, with that chalky and slightly iodine minerality which is the absolute signature of Chablis on Kimmeridgian. On the palate, the attack is lively and sharp, driven by chiselled acidity and natural tension that structure a substance both light and generous, with discreet fat from the lees ageing that brings roundness without ever weighing things down. The finish is long, saline and mineral, with that persistent return of lemon zest and wet flint that extends the tasting well beyond the glass. A straight, precise and sincere Chardonnay, at once approachable now and promising fine development over three to five years.

The domaine

Domaine Garnier & Fils is a family property founded in Ligny-le-Châtel, run by brothers Jérôme and Xavier Garnier, the first generation to vinify and bottle their own production since 1996, whereas their father still sold grapes to the major merchants. Jérôme works the vineyards, Xavier makes the wine: a natural division of tasks between two brothers united by the same passion and exigence. The domaine is committed to certified organic farming with Ecocert, with practices respectful of the environment and limited yields. In the cellar, the philosophy is resolutely non-interventionist: fermentation with wild yeasts, long ageing on lees, light filtration before bottling without fining. Ageings vary according to the cuvées, between stainless steel to preserve the purity of the village, and Austrian oak Stockinger barrels or foudres for the Premiers and Grands Crus, to add complexity without ever masking the terroir.

Food and wine pairing

This Chablis is the natural companion to Marennes-Oléron or Breton oysters, shellfish, a seafood platter, grilled fish with beurre blanc, sole meunière or John Dory tartare with fresh herbs. It will pair beautifully too with white asparagus and mousseline sauce, lobster salad or risotto with courgettes and lemon. Served well chilled between 8 and 10°C, it will reveal all the purity, tension and saline minerality of one of Burgundy's finest Chardonnays.
