The Arbois Trousseau Tour Canoz 2024 from Domaine Sylvain Faudot is one of the most endearing and sincere cuvées from the Jura vineyards: a 100% Trousseau, from a quiet, unpretentious domaine run with steadiness and precision by a winemaker who forged his experience both on the family vines and within the great house of Henri Maire. Awarded a star in the Guide Hachette des Vins, this wine perfectly embodies what Jura Trousseau does best: lightness, vibrant fruit, spice and minerality, in a direct and immediately pleasurable style.

The terroir of Tour Canoz

Tour Canoz is a lieu-dit located in the commune of Saint-Cyr-Montmalin, north of Arbois, on one of the most distinctive and ancient zones of the Jura vineyard. The soils are composed of Triassic clay marls, very old, multicoloured clays formed by the compression of sediments during the uplift of the Alps against the Jura massif millions of years ago. These layers of marly clay, mingled with limestone, have risen to the surface in the form of small hills, creating a soil profile that is notably poor, well-drained and uncommonly rich in mineral content. It is precisely this austere, singular terroir that gives the Trousseau its hallmark tension, finesse and minerality. Trousseau, an exclusively red grape of the Jura, known as Bastardo in Portugal where it is used in Port and Madeira, produces wines on these soils of a lightness and elegance that stand in stark contrast to the powerful reds of the south of France. Maceration is carried out over approximately 15 days in stainless steel tanks, followed by 12 months of ageing in oak barrels.

Tasting profile

The colour is a clear ruby with the orange-tinged highlights characteristic of Jura Trousseau, light and translucent. The nose is immediately appealing in its freshness and vivacity: aromas of fresh red fruits, raspberry, cherry and redcurrant, intertwined with peppery and liquorice spice notes, a light floral touch of violet and a discreet clay-like minerality. On the palate, the wine is supple, lively and wonderfully drinkable: the tannins are fine and silky, the fresh, well-integrated acidity brings tension, and the light, elegant body unfolds with naturalness and sincerity. The finish is fruity and gently spiced, with pleasant persistence and that signature character of boiled sweets and crunchy red fruits that marks well-made Trousseau from the Arbois appellation. A wine of pleasure and character, approachable now and set for lovely development over three to five years.

The domaine

Sylvain Faudot established himself in 1998 in Saint-Cyr-Montmalin, north of Arbois, taking over the family's one hectare and gradually building a six-hectare vineyard managed through sustainable agriculture, without chemical herbicides and with respect for individual parcels. Trained by both his father and the house of Henri Maire, for whom he delivered his harvest for twelve years, he acquired a dual expertise, both viticultural and technical, enabling him today to vinify each parcel separately with unwavering precision. The winery was modernised in 2005, notably with automatic temperature control for the tanks. Two-thirds of the vineyard is declared under AOC Arbois, with whites representing 60% of production, primarily Chardonnay, alongside Trousseau, Poulsard and a remarkable Vin Jaune. A domaine without fanfare, kept with consistency and a love of work done well.

Food pairings

This Trousseau Tour Canoz will pair beautifully with Bresse chicken roasted with morels, quail with grapes, rabbit braised in a casserole with wild mushrooms, a game terrine, or a selection of Jura cheeses such as aged Comté, Morbier or Bleu de Gex. Served between 14 and 16°C, slightly cool, it will reveal all the finesse and charm of one of the most singular grape varieties in the French vineyard.
